This recipe is So EASY. I promise you.The hardest part is scooping out the inside of the tomato, and it really isn’t that hard.It’s so delicious i get used to cook it every thursday!
Taco Stuffed Tomatoes are so delicious,simple to whip together,and also they are super healthy and veggie filled. This meal is ideal for a busy weekday dinner.
You will Need :
- 4-6 large tomatoes
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 4 cups spinach, chopped
- 1/2 cup corn *fresh or frozen
- 1/4 cup sharp cheddar cheese *optional
- 1 tablespoon cilantro, chopped
Directions :
Step 1 :Preheat oven to 375.
Step 2: Cut the top off the tomatoes and scoop out all the pulp then place it in a baking dish.
Step 3:Brown the ground beef in a large saute pan Then add the taco seasoning.
Step 4:Add the spinach and corn.Cook until the spinach is wilted and everything is fully mixed together.
Step 5: Stuff the tomatoes with the beef mixture. Use any remains beef in the bottom of the baking dish.
Step 6:Sprinkle with cheese.
Step7: Bake for 15 minutes . Top with the cilantro and serve.
Tips And Tricks :
1- Only make this recipe with tomatoes that you’d want to eat raw. Leave the bland,store-bought tomatoes out of it
2-Try avocado or guacamole, shredded cheese,or crumbled tortilla chips .
