Grilled Bacon-Tomato Sandwiches
The hothouse tomatoes are starting to look very good right now, and the field tomatoes are starting to arrive. One of my favorite sandwiches is the tomato and bacon sandwich, which is very simple and yet very satisfying. The key to a great sandwich is the ripe tomatoes. I’m sure that I’ll enjoy many more of these over the next couple of weeks.
These sandwiches are very easy to prepare and my family loves them. The combination of fresh basil, melted cheese, and Italian dressing adds a bit of flavor to this sandwich.
Ingredients
- 4 slices Italian bread (1/2 inch thick)
- 4 slices provolone cheese (1 ounce each)
- 4 slices tomato
- 4 bacon strips, cooked and halved
- 2 teaspoons minced fresh basil or 1/2 teaspoon dried basil
- 2 tablespoons Italian salad dressing
Directions
To make the sandwiches, top 2 slices of bread with cheese, and then layer them with 2 tomato slices, 2 strips of bacon, half of the basil, and another cheese slice. In a large pan, over medium heat, melt the cheese. When the cheese is melted, spread the sandwiches on the pan and continue to cook for 2 to 3 minutes.
