Beef Vegetable Soup

This recipe is the perfect hot soup and a great way to eat any vegetable in the refrigerator.it is delicious because of the protein-rich beef and various nutritious vegetables, in addition, this is a very versatile recipe, so feel free to replace the vegetables with other vegetables that you may have on hand.

* Ingredients :

° 1 pound meat
° 1 onion cutting to cubes
° 6 red potatoes, diced
° 5 carrots, finely chop
° Half c water
° 1 (15 oz) can whole corn, drained
° 2 cups frozen green beans
° 1 bottle (46 fl oz) of tomato , vegetable juice cocktail
° 1 cup water
° 1 teaspoon salt
° 1 teaspoon ground black pepper

* Instructions :

Step 1
In saucepan on medium heat, cooking beef, onion, & potatoes, covered, to beef is no longer pink also potatoes are tender, 11 to 16 min .

Step 2 . Meantime, place the carrots and 1/2 cup water in a microwave-safe bowl and microwave for 5 minutes, until tender.

Step 3 . Drain the meat mixture and return to the pot with carrots, corn, chickpeas, cocktail juice, water, salt and pepper.Simmer for 30 minutes, until all the flavors are combined and the soup is hot.
