Ingredients:


1 lb. shrimp, peeled, deveined, and chopped
1 1/2 cups Arborio rice
1/2 tbsp paprika
1/2 tbsp oregano, minced
1 red pepper, chopped
1 onion, chopped
1/2 cup parmesan cheese, grated
1 cup clam juice
3 cups chicken stock
1/4 cup dry sherry
2 tbsp butter
1/4 tsp pepper
1/2 tsp salt


Directions:


1. Add butter into pot and set on sauté mode.

2. Add onion and pepper and sauté until onion is softened.

3. Add paprika, oregano, pepper, and salt. Stir for minute.

4. Add rice and stir for a minute.

5. Add sherry, clam juice, and stock. Stir well.

6. Seal with lid and cook on manual high pressure for 10 minutes.

7. then QPR than open the lid.

8. Add shrimp and cook on sauté mode for 2 minutes.

9. Stir in cheese and serve.
